Delicious Keto Butter Pecan Ice Cream

Amazing Keto Butter Pecan Ice Cream

After searching online for a keto butter pecan ice cream recipe, wasting all of the ingredients and my time making it and then to have an ice cream that was mediocre at best, I decided to try my hand at making up a recipe myself.  I have to say that I did not have high hopes that it would taste like my favorite store-bought ice cream.  But OMG, this recipe is absolutely delicious and even better because it does not have all of the artificial flavors, chemicals and junk.  And it's Keto too!   How much better can it get!  


Recipe Ingredients:

6 TBSP of Butter

1/2 cup of finely chopped pecans

2 cups of Heavy Whipping Cream 

1 cup of unsweetened almond milk 

3/4 cup of Allulose ***

1/8 tsp. of Sea Salt

1 tsp. of Vanilla Extract


Directions:

Melt 6 TBSP of butter into a saucepan.  

Add 1/2 cup of finely chopped pecans into the saucepan of melted butter.  Bring butter and pecans to a rolling boil until butter begins to brown - approximately 3-5 minutes.  This will give the butter a nice caramelization.  Note: Turn down heat to where it will still be boiling.  Avoid burning the butter as burnt pecans/butter is not a pleasant taste!  I have found that on an electric stovetop that 3 minutes is about right.  Put it aside and allow it to cool.  


Set up ice cream maker except for the freezer bowl (bring that out of the freezer after all ingredients prepared together)


Whisk allulose and sea salt together in a mixing bowl or large Pyrex container

Add Almond milk, whipping cream and vanilla extract.  Add in the melted butter/pecan mixture.  

Whisk together until well combined.  


Bring the ice cream freezer bowl out of the freezer and place in the machine per the manufacturer instructions.  Note: it can take at least several days for the container to be fully frozen.  If not fully frozen, then the ice cream consistency will be soupy.  You can check by shaking the container to listen for any signs of water moving around inside.  


Turn on the ice cream maker and pour the ice cream mix into the freezer bowl of the machine.   Follow the manufacturer instructions for how long to keep machine running.  Typically, it is about 25-35 minutes.  If you see the ice cream getting to the top of the machine, probably a good time to turn off the machine.  After the ice cream is finished, just pop in the freezer inside an airtight plastic container and ENJOY!!  The ice cream will get harder after being in the freezer a day or two, otherwise it is more the consistency of a softer serve ice cream.  Either way, it is delicious!
